Almond Cashew Walnut Burfi /Mixed nuts Burfi/ Almond Cashew Walnut Sweet


Almond Cashew Walnut Burfi /Mixed nuts Burfi/ Almond Cashew Walnut Sweet is a healthy, nutritious and delicious snack. Almonds, Cashew, Walnuts are packed with heart healthy fats, protein, vitamins, and minerals.  If you are allergic to nuts , this recipe is not for you. 
My 3yr old son, Ishaan is a picky eater and I'm always worried about his nutrition intake. I keep on cook different tasty snacks for my kid with healthy nutritious ingredients. I tried this one and Ishaan liked it. Sometimes I make the same sweet with Almonds only. You can check the Almond Burfi recipe.

Yesterday, our friends tasted the sweet and liked it. One of my friends Suchi asked for the recipe. Thanks to Suchi, who made me restart the blog. Suchi, this recipe is for you.

 

Ingredients:

Whole Almonds – 1 cups  (Alternatively you can take silvered Almonds -1 cup)
Cashew Nuts - 1/2 Cup
Walnuts - 1/2 Cup
Milk –  1 cup
Sugar – 1.5 cup
Ghee/Clarified Butter – 2 Tbsp
Cardamom  powder -1 pinch (optional)

Method:

  • Soak the  whole almonds in hot water for about 45 minutes.
  • Peel the almonds skin. (or you can use silvered almonds instead, no need to soak silvered almonds.)
  • In a food processor/blender blend the almonds, Cashew nuts and walnuts into a fine thick paste by adding enough milk.
  • Heat the ghee/clarified butter in a heavy bottomed frying pan on medium heat.
  • As the ghee melts, add the almond-cashew-walnut paste and cook for 2 minutes stirring continuously.
  • Now add sugar and cook on medium heat. As sugar melts, the mixture turns into thin mixture. Continue stirring until the mixture thickens and leaves sides of the pan.
  • Add cardamom powder. Remove the frying pan from the heat.
  • Grease a  heat resistant plate with Ghee/Clarified butter and Pour the mixture into the greased plate.
  • keep the mixture aside for about 20 minutes. Be careful the mixture will be very hot. Let the mixture cool down and handle it when the mixture is luke warm.
  • Now make round balls and press gently to get the shape in the main picture.
  • Cool it to the room temperature and store burfi in an airtight container.
  • Badam Cashew Walnut burfi/ Almond Cashew Walnut Burfi / Mixed Nut Sweet can be stored at room temparature for up to one week.
Tips:
  •  You can also add pistachios.
  •  Do not skip the main ingredient,almonds.
  •  Do Not use roasted or fried nuts. Only use raw nuts for this recipe.
