Ravva laddu / Semolina Sweet Balls/ Sooji laddu

Ravva laddu / Semolina sweet balls/ Sooji laddu is another easy to make sweet. I learned this recipe from my mother. She used to make this sweet frequently during my childhood. This recipe makes approx. 30 small size (as shown in the picture)ladoos/balls. 


Ravva laddu / Semolina sweet balls/ Sooji laddu
 
Ingredients:  

 Semolina/Sooji/fine rava – 2 cups
 Ghee/Clarified Butter – 4 Tbsp
 Shredded Dry Coconut – 1 cup
 Sugar – 1 1/2 cups
 Milk(boiled and cooled to room temparature) - 1/2 cup
 Raisins – ¼ cup
 Nuts (Cashews and Almonds) – ¼ cup


Method:

  •   Heat 1Tbsp of clarified butter/Ghee in a non-stick pan on medium heat.
  •   In the heated butter/Ghee roast nuts(cashews and almonds), raisins and shredded   dry cocunt one by one until golden brown and remove from the pan and keep aside.

  •    To the same pan add remaining 3Tbsp of clarified butter/Ghee and heat. 
  •    Once the butter/Ghee is hot, add Rava/Sooji/semolina and roast until you get the nice roasted aroma.
  •    Add roasted Shredded Coconut, Raisins, Nuts and Sugar to roasted rava/semolina/sooji and mix well on low heat until sugar melts.
  
 
     
  • Now turn off the heat. Sprinkle few tbsps of milk and mix till it forms a crumbly mixture. Note: do not use all the milk, just use enough milk to make ladoos/balls.
  •  
      
  •    Dip your hands in cold water, take small amount of the mixture (golf ball size) and  gently form small ladoos/balls.
Note: Be careful the mixture can be very hot. Do not burn your hands, only make laddus/balls when the mixture is warm and your hands can bear that heat, you can sprinkle more milk if the mixture becomes dry.


  •    Let the Ladoos cool completely to room temparature and serve.
  •    Store the rava ladoos in airtight container up to 2 weeks.
