Egg fried rice is one of the simple, quick, tasty and easy to prepare dishes which I make frequently at home. Usually I make Egg Fried Rice for Brunch (meal eaten between breakfast and lunch) on lazy weekends, when we wake up late, after a quick glance of news headlines and having a cup of coffee leisurely it's almost Brunch time :)

Rice - 3 cups (Rice cooker measuring cup)
Eggs - 6 numbers
Green beans (finely chopped) - 1/4 cup

Carrot(finely chopped) - 1/2 cup
Green Peas - 1/4 cup
(Note: You can use frozen mixed vegetables 1 cup)

Salt - 2 tsp (Adjust to taste)
Red Chili powder - 1 tsp (Adjust to taste)
Garam Masala – 1 tsp
Chili-garlic sauce - 1 tbsp (Adjust to taste)
Vegetable/Peanut/Canola oil - 3 tbsp
Preparation :
- Cook the rice with 6 cups of water, pinch of salt and 1 tsp of oil till done and keep it aside. (Note: Here I've used Sona Masoori rice , so used 6 cups of water to boil 3 cups of rice. Please adjust water according to the rice type)
- Add little water to vegetables (carrot, green beans, green peas) and cook in microwave or on stove top, drain the water and keep the boiled vegetables aside.
- Mean while break eggs and pour it in a separate bowl without getting shells in it and beat them with 1/2 tsp of salt and 1/4 tsp of red chili powder.
- Heat 3 Tbsp of oil in a pan.
- Add the eggs to the heated oil in the pan and scramble it with the help of fork or spoon. Cook for 4 minutes.
- Add cooked vegetables (green beans, green peas and carrots) and stir for another minute.
- Add garam-masala powder , remaining salt and red chili powder and mix well.
- Add the cooked rice to the pan.

Add chili-garlic sauce to the rice and mix well for 2 more minutes.
- Add coriander leaves, mix well and turn off the heat. The egg fried rice is ready to serve.
Tips:
- Use a large, wide pan so that mixing is easy
- If you have left over rice, try this recipe and convert left over rice to a yummy meal.
- This recipe tastes good with any kind of rice. Adjust the water to boil the rice according to rice type.
- Stock up 2 or 3 frozen mixed vegetables packets in freezer. When you are out of fresh vegetables or don't have much time to cook, these mixed vegetables are really useful to make quick and easy dishes like this.
- If you don't eat eggs, omit eggs and add 1 more cup of vegetables to turn this recipe to Vegetable fried rice.
- If you have left over baked or fried chicken, cut them into inch size cubes and add along with the vegetables in the recipe to turn this recipe to Chicken Fried rice. If you don't like vegetables in chicken fried rice, you can omit vegetables.
