Egg Drumstick Brinjal(egg plant) in Tangy Tamrarind Sauce / Kodiguddu Munagakaya Vankaya Pulusu / Egg Pulusu

 
 
Eggs Drumsticks Brinjal (egg plant)  Tangy sauce/ Kodiguddu Vankaya Mungakaya pulusu (telugu) is the recipe for eggs, drumsticks, Eggplant/Brinjal cooked in a tangy tamarind sauce.
 
Ingredients:

 
  • Eggs (hard boiled) - 6
  • Brinjal/Eggplant/Vankayalu – 200 gm
  • Drumsticks (cut into pieces) – 12 cut pieces
  • Onions (Medium size) - 2
  • Green chilies – 2
  • Tamarind –  lemon size ball
  • Oil - 1 Tbsp
  • Turmeric – ¼ tsp
  • Salt - 2 tsp (adjust according to your taste)
  • Red chili powder - 1 tsp (adjust according to your taste)
  • Coriander powder- 1tsp
  • water - 2 cups
  • Sugar or Jaggery - 1/2 tsp
For tempering/tadka/popu/talimpu
  • Mustard seeds- 1 tsp
  • Cumin seeds - 1/2 tsp
  • Curry leaves - few
  • Fenugreek seeds - 5
  • Crushed garlic - 1
Preparation Method:
  • Hard boil eggs. Remove the shell, pierce the eggs vertically(lenght wise) with knife and keep it aside (To make eggs to absorb tangy sauce).
  • Soak Tamarind in warm water for 5 minutes and extract tamrind pulp into water and discard the tamarind pieces , add 2 cups of water to the tamarind extract and  keep it a side.
  • Heat oil in a cooking vessel, add the mustard seeds and let them splutter. Add the cumin seeds, fenugreek seeds and curry leaves and sauté for a few seconds.  Now add crushed garlic and saute till sligtly brown.
  • Add chopped Onions and green chilies, sauté until onions are translucent. Now add coriander powder and saute for few minutes.
  •  Add the cut Eggplant/brinjal, drumstick pieces and turmeric powder, red chili powder and salt to taste and mix well. Place lid and cook over low flame for 5 minutes.

  • Add the hard boiled eggs and tamarind water  (tamarind extract + 2 cups of water, prepared earlier) and bring it to boil for 10 minutes.
 
                       
  • Add  sugar/jaggery and simmer it for 5 more minutes or till you get the required gravy consistency.
                                             
  • Serve Eggs Drumstick Eggplant tangy sauce/kodiguddu vankaya munagakay pulusu/ Eggs Pulusu with Rice or Roti.


 
  
Tips:

  • Cut egg plant pieces tend to change their color to brown/black in a short time, to avoid this put the cut egg plants pieces into salt water.
  • Eggs, Drumsticks, Eggplant/Brinjal among these 3 ingredients you can omit any 2 of them and follow the same procedure to prepare the tangy sauce with one ingredient. It will taste yummy.
